Your saddle. This model has a fixed gullet, so there is no gullet plate to choose or change.

What can I adjust on this saddle?

The Wintec Kids saddle has a fixed gullet and is not designed to have the tree width altered. It does not have the EASY-CHANGE Gullet System, the EASY-CHANGE Riser System or the EASY-CHANGE Fit Solution.
